Who Needs Gud Speling?

The Chick-Fil-A Cows and the Chick-Fil-A boss-man
don't spel or rite too gud.

'Eat Mor Chikin' is their motto. But it seems to be
working. Chick-Fil-A is the second largest fast-serve
chicken food chain in the world. Not too shabby
for my home-boy Truett Cathy.

Trouble is, Mr. Cathy has a little trouble with his English,
too. He mangled the spelling of Chick Filet. And the
quote he has hanging in the Madison store says:

'Food is essential to life. Therefore, make it good.'

It seems he may have dangled a participle, there. My
favorite English teacher patient from New Jersey might
argue that we're not sure whether to make our 'food'
or our 'life' good.

But that's OK. Call it 'delicious ambiguity'. Let's make
our food AND our life good.

Because we can't really have a good life without good
food. Our experience of life is directly connected to our
expression of life, which depends on how well our body
works...which depends largely on the quality of our food.

'Eating better' is a good 'physical' goal. Most people
associate eating/food goals with how they look: getting
their bodies in shape, reducing flab, blubber, love
handles, etc.

But 'eating better' can also improve how you feel: your
'mental' goals. Junk, sugar, refined flour, high-fructose
corn syrup, trans-fats, grain products, artificial sweeteners
(have I left out any of your favorites?) all cause trouble
in the brain chemistry and blood sugar. That can make
it hard to focus and think clearly.

These chemicals can also disrupt the neurotransmitters
in the brain, causing mild or major depression, mood
swings, irritability, manic-depression/bi-polar disorder
and even schizophrenia.

And inflammation (from lots of grain and trans-fats) is
one of the biggest culprits in Alzheimer's disease,
senile dementia, ADHD, behavioral problems, dyslexia.

Wow. Our food really does need to be good. And that
means fewer inflammatory Omega-6 fats, and more
Omega-3 fats to balance them out.
